Recipe for Peppered Salmon
Ingredients for Peppered Salmon: 4 salmon fillets.
200g of new potatoes.
100g of peas.
Juice of half a lemon.
Freshly milled pepper.
2 teaspoons of olive oil.
1 tablespoon of parsley, chopped. Peppered Salmon preparation instruction: Pre-heat your oven to 190C.
Boil the potatoes for about fifteen minutes.
Lay the salmon fillets on a foil-lined baking tray. Squeeze the juice of half a lemon over the fillets and sprinkle with pepper.
Bake the salmon for about 6-7 minutes.
When the potatoes are nearly cooked, add the peas and cook for 2-3 minutes. Drain through a sieve and return to the pan.
Season the potato and pea mixture with pepper, then add oil and parsley. Crush roughly with a wooden spoon or masher.
Serve the salmon on top of the crushed potato mixture.
