Recipe for Macapuno Pandan Cake

Ingredients for Macapuno Pandan Cake:
1 t baking powder.
6 egg yolks.
1 cup of cake flour.
½ cup of sugar.
½ cup of pandan extract, cold.
½ t vanilla.

FILLING:
1 small bottle macapuno.
6 egg whites.
½ cup of sugar.

Macapuno Pandan Cake preparation instruction:
Pre-heat oven at 375F. Prepare cake. Combine sifted flour, baking powder and sugar. Make a well at the center. Pour egg yolk, pandan extract and vanilla. Mix well. Beat egg whites until foamy. Gradually add sugar beat till stiff peaks are formed. Cut and fold in meringue into the batter mixture and blend well. Pour in utility tray lined with wax paper. Bake until done. When cool, place in pasting cloth. Sprinkle with sugar. Spread the filling into the cake evenly. When done roll the cake. Place in pastry cloth. Slice into 8-10 equal portions.
